Sciacquateli con abbondante acqua corrente e iniziate a tagliarli con una mandolina.
Se preferite una versione più gustosa, potete friggerli in una padella con abbondante olio di semi. Se invece volete optare per la versione light, ricoprite di carta da forno una leccarda. Versate un filo di olio e spargete le fettine di topinambur. Mettete a scaldare il forno a 180° e, una volta raggiunta temperatura, riponete il topinambur a cuocere per circa 20 minuti. Controllate lo stato di cottura dalla doratura e dalla croccantezza.
Una volta pronte, condite con un pizzico di sale, pepe e spezie a vostro piacimento. Mescolate bene e servite su una terrina.
