Scolate i gambi e lasciateli intepidire. Ripetete il procedimento anche con le patate. Prendete l’aglio, sbucciatelo e tritatelo finemente. Versatelo nel contenitore di un mixer e unitevi i gambi e le patate tagliati in pezzi piccoli. Condite con olio, sale e pepe secondo il vostro gusto. Frullate fino a ottenere un composto omogeneo e vellutato.
Versatelo in una casseruola e fatelo scaldare a fuoco basso.
Nel frattempo, in una padella mettete a rosolare la pancetta, fino a renderla croccante.
Dopo un paio di minuti, togliete dal fuoco la casseruola con la crema e impiattate. Condite con un filo di olio e spargete sopra i cubetti di pancetta.
Per rendere ancora più gustosa la ricetta, potete spolverare sopra delle scaglie di formaggio o del formaggio grattugiato.
