Prendete una ciotola e con uno sbattitore elettrico lavorate il burro, precedentemente ammorbidito, insieme allo zucchero semolato, fino ad ottenere una crema morbida. Unite poi i semi interni della bacca di vaniglia o, in alternativa, un cucchiaino di estratto naturale alla vaniglia.
Alla crema unite la ricotta, le uova intere e la scorza grattugiata del limone. Aggiungete poi la farina setacciata al composto ed infine il lievito e un pizzico di sale. L’impasto dovrà essere corposo.
A questo punto prendete una teglia 30×20 circa, imburratela e infarinatela. Stendete l’impasto ottenuto al suo interno.
Dividete a metà le albicocche Elisir lavate e asciugate, togliete il nocciolo e distribuitele sull’impasto lasciando la parte interna all’insù. Spolverizzate le albicocche con lo zucchero di canna e infornate per 40 minuti.
Lasciatela intiepidire e spolverizzate con zucchero a velo. Potrete conservarla per 3-4 giorni a temperatura ambiente in una tortiera, ma ve lo assicuro, non ne rimarrà neanche una fetta![/vc_column_text][/vc_column_inner][/vc_row_inner][mkd_section_title enable_separator=”no”]Il tocco segreto di Gigi[/mkd_section_title][mkd_separator position=”left” color=”#f38436″][vc_column_text]La torta di albicocche è un must per la colazione dei bambini, ma anche per la merenda dei più grandi. Abbinata a questo cocktail fresco e dissetante farete un figurone con gli amici.
Vi serviranno 18 albicocche fresche, 3,6dl di brandy, 5 cucchiai di succo di limone e 6 cucchiaini di zucchero di canna.
Lavate e togliete il nocciolo alle albicocche, frullatele con tutti gli ingredienti. Et voilà il vostro aperi-merenda è pronto: servitelo in bicchieri colmi di ghiaccio e aggiungete acqua frizzante fino al bordo!
