Versate un filo di olio e mettete in forno fino a farla appassire.
Nel frattempo, pulite le foglie di cavolfiore dalle coste più robuste e affettate a cubetti. Aggiungetele alla cipolla e condite a piacere con sale e pepe.
Lasciate scaldare fino a quando le foglie del cavolfiore non si siano ammorbidite.
Tagliate a piccoli pezzi il pane raffermo e in una terrina a parte, mettetelo in ammollo con il latte a temperatura ambiente. Lasciate riposare per qualche minuto e poi strizzate.
Trasferite in una ciotola il pane strizzato, il cavolo e la cipolla e iniziate a lavorare il composto con le mani. Aggiungete gradualmente il pecorino grattugiato e l’uovo. Condite con un pizzico di sale, un po’ di pepe e noce moscata a piacimento. Lavorate il composto fino a ottenere una consistenza morbida ma corposa.
Appena avrete terminato, bagnate i palmi delle mani con dell’olio e formate delle polpettine piccole e compatte.
Preriscaldate il forno a 200° in modalità ventilata.
Ricoprite le polpettine con il pangrattato e riponetele su una teglia precedentemente rivestita da carta forno.
