Per la farcitura: lavate e mondate gli spinaci e le bietole. Tagliate via i gambi delle bietole, tagliateli a striscioline e sbollentateli per circa 1 minuto in acqua e sale.

Fate sgocciolare bene. Sbollentate anche per qualche secondo in acqua e sale prima le foglie delle bietole e poi gli spinaci. Fate sgocciolare per bene.

Sbucciate cipolla ed aglio e tritate il tutto finemente, dopodichè riscaldate l’olio in un tegame capiente e fate rosolare il trito a fiamma moderata.

Aggiungete la verdura (dopo averla anche spremuta un poco con le mani), mescolatela con il trito, spegnete il fornello e insaporite con il parmigiano, sale e pepe.

Riscaldate il forno a 200° C con ventilazione.

Lavorate nuovamente la pasta sul piano di lavoro infarinato e tagliatela in due parti.

Allargate ogni parte in modo rettangolare in misura della teglia. Passate un foglio di pasta sulla teglia foderata con carta da forno.

Distribuite le verdure sulla pasta lasciando un piccolo bordo. Farcite con il prosciutto e la ricotta sgocciolata e sbriciolata.

Coprite con il secondo foglio di pasta e chiudete ermeticamente i bordi pressando con le dita.
